  • 1 lb sushi-grade tuna cubed
  • 2 cups cooked sushi rice

Toppings

  • 1 avocado sliced
  • 1/2 cup cucumber sliced
  • 1/4 cup seaweed salad
  • 1/4 cup edamame shelled

Sauce

  • 1/4 cup soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp lemon juice

Preparation

  • Slice the sushi-grade tuna into 1/2-inch cubes and place them in a medium bowl. Add soy sauce, sesame oil, and lemon juice. Toss gently to coat and let marinate for 15 minutes.
  • Prepare sushi rice according to package instructions if not already cooked. Allow it to cool slightly before assembling the bowl.

Serving

  • Divide the cooked rice among four bowls. Top each with marinated tuna, avocado slices, cucumber, seaweed salad, and edamame.
  • Drizzle each bowl with the remaining marinade. Garnish with sesame seeds and green onions if desired. Serve immediately.

  • For best freshness, consume the poke bowl immediately. If storing, keep in an airtight container in the refrigerator for up to one day. Note that freshness and texture may be compromised.
