  • 2 tbsp honey
  • 2 cloves garlic minced

Preparation

  • Cut the salmon into bite-sized pieces and pat dry with paper towels. This helps the glaze stick better.
  • In a saucepan over low heat, combine soy sauce, brown sugar, honey, garlic, and black pepper. Stir until the sugar dissolves and the mixture is smooth.

Smoking

  • Preheat your smoker to 225°F.
  • Arrange the salmon pieces on the smoker rack. Smoke for about 30-40 minutes or until the salmon flakes easily with a fork.
  • During the last 10 minutes of smoking, brush the glaze over the salmon, allowing it to caramelize slightly.

Serving

  • Remove the salmon bites from the smoker and let them rest for a few minutes before serving. Enjoy with your favorite dips.
