Equipment

  • 1 deep fryer or large pot
  • 1 mixing bowl medium
  • 1 wire rack

Ingredients

Fish Bites

  • 1 lb firm white fish fillets cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 large eggs
  • Vegetable oil for frying

Hot Honey Glaze

  • 1/2 cup honey
  • 2 tbsp hot sauce
  • 1 tbsp lemon juice

Instructions

Preparation

  • Cut the fish fillets into bite-sized pieces. Pat dry with paper towels and season with salt and pepper.
  • In a deep fryer or large pot, heat vegetable oil to 350°F.
  • In a shallow dish, combine the flour, cornstarch, garlic powder, cayenne pepper, paprika, and salt.
  • In a separate bowl, whisk together the eggs and milk.
  • Dip each piece of fish into the egg mixture, then coat evenly with the flour mixture.
  • Carefully place the coated fish into the hot oil. Fry in batches until golden brown and cooked through, about 3-4 minutes per batch.
  • Remove the fish from the oil and place on a wire rack to drain excess oil.
  • In a small saucepan over low heat, combine honey, hot sauce, and lemon juice. Stir until well combined and heated through.

Serving

  • Drizzle the hot honey glaze over the fish bites, ensuring even coverage.
  • Serve the hot honey fish bites immediately for best taste and texture.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a preheated oven at 350°F until warmed through.

Notes

Ingredient Substitutions: Use gluten-free flour for a gluten-free version. Replace hot sauce with a milder option if desired.
How to Serve: Pair with a creamy dip or fresh salad for a complete meal.
Storage & Freshness: Best enjoyed fresh, but can be stored for up to 2 days in the fridge.
Make-Ahead Tips: Prepare the glaze in advance and store it in the fridge. Reheat gently before using.
