Equipment

  • 1 smoker
  • 1 mixing bowl large
  • 1 basting brush

Ingredients

Marinade

  • 1 cup brown sugar
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper

Salmon

  • 2 pounds fresh salmon fillets skin removed

Instructions

Preparation

  • In a large mixing bowl, combine brown sugar, honey, soy sauce, garlic powder, onion powder, black pepper, and cayenne pepper. Mix well until the sugar dissolves completely.
  • Cut the salmon fillets into bite-sized pieces. Add them to the marinade, ensuring all pieces are well coated. Cover with plastic wrap and refrigerate for at least 2 hours.

Smoking

  • Preheat your smoker to 180°F. Use a blend of alder and cherry wood chips for a balanced smoke flavor.
  • Remove salmon from the marinade and pat dry. Place on smoker racks, ensuring even spacing. Smoke for approximately 2 hours, basting every 30 minutes with remaining marinade.

Finishing

  • Ensure the salmon reaches an internal temperature of 145°F before removing from the smoker.
  • Allow salmon to cool slightly to let the glaze set. Serve warm or at room temperature as a delightful appetizer.

Storage

  • Place any leftovers in an airtight container and refrigerate for up to 3 days. Reheat gently before serving.
