Ingredients
  

Salmon

  • 4 salmon fillets 6 ounces each, skin on
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Corn and Tomato Relish

  • 1 cup fresh corn kernels
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh cilantro chopped
  • Salt and pepper to taste

Instructions
 

Preparation

  • Season the salmon fillets with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat.
  • Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until the salmon is cooked through.
  • In a mixing bowl, combine corn kernels, cherry tomatoes, red onion, lime juice, and cilantro. Season with salt and pepper, and mix well.

Serving

  • Place the cooked salmon on a serving platter. Top each fillet with the corn and tomato relish. Garnish with additional cilantro if desired.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or enjoy cold.
