  • 4 cod fillets
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes halved
  • 4 garlic cloves minced
  • 1 cup fresh basil leaves chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Preparation

  • Pat the cod fillets dry with a paper towel and season both sides with salt and pepper.
  • Heat olive oil in a large non-stick skillet over medium-high heat until shimmering.
  • Add the cod fillets to the skillet and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and keep warm.

Cooking the Sauce

  • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  • Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to soften and release their juices.
  • Stir in chopped basil and season with salt and pepper to taste.

Combining and Serving

  • Return the cod fillets to the skillet, nestling them into the tomato basil sauce. Spoon some sauce over the fish and let it simmer for a couple more minutes.
  • Serve the cod with the tomato basil sauce and a squeeze of fresh lemon juice. Enjoy!

  • Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently before serving.
