  • 4 salmon fillets skin removed
  • 2 cups cherry tomatoes halved
  • 2 bell peppers sliced
  • 1 red onion sliced
  • 1/2 cup crumbled feta cheese

Seasoning

  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat oven to 400°F. Slice all vegetables and pat dry the salmon fillets.
  • Arrange salmon and vegetables on a large sheet pan. Drizzle with olive oil and sprinkle with herbs, salt, and pepper.
  • Scatter crumbled feta cheese over the top of the salmon and vegetables.

Serving

  • Bake for 20 minutes or until salmon is cooked through. Serve hot with your choice of side.
