Equipment

  • 1 smoker
  • 1 mixing bowl
  • 1 wire rack

Ingredients

Main Ingredients

  • 2 whole whitefish about 1.5 lbs each
  • 1/4 cup kosher salt
  • 1/4 cup brown sugar
  • 1 tablespoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Wood chips for smoking

Optional Additions

  • 1 tablespoon paprika
  • Lemon slices
  • Fresh dill sprigs
  • A dash of cayenne pepper

Instructions

Preparation

  • Rinse the whitefish under cold water and pat dry with paper towels. Mix the salt, sugar, black pepper, garlic powder, and onion powder in a bowl. Rub this mixture all over the fish, including the cavity.
  • Place the fish in a glass dish, cover, and refrigerate for at least 4 hours or overnight. This allows the flavors to penetrate the fish.

Smoking

  • Preheat your smoker to 180°F. Choose apple or cherry wood chips for a mild, sweet flavor.
  • Rinse the brine off the fish and pat dry. Place the fish on the smoker rack and smoke for 3-4 hours until the internal temperature reaches 145°F.

Serving

  • Remove the fish from the smoker and let it rest for 10 minutes before serving. This helps the flavors to set and the fish to cool slightly.

Storage

  • Wrap any leftover smoked fish tightly in plastic wrap and store in the refrigerator for up to 3 days. For longer storage, freeze in an airtight container for up to 2 months.

Notes

Pro Tips: Use fruit wood chips like apple or cherry for a mild flavor. Maintain a steady smoker temperature between 180°F and 200°F for the best results.
Ingredient Substitutions: If whitefish is unavailable, try using trout or salmon as alternatives.
How to Serve: Serve with bagels, cream cheese, and capers for a classic presentation.
Storage & Freshness: Wrap leftovers tightly and refrigerate for up to 3 days, or freeze for longer storage.
Make-Ahead Tips: Brine the fish overnight for deeper flavor and prepare the smoker ahead of time to streamline the process.
