  • 1 meat thermometer

Ingredients

Main Ingredients

  • 2 pounds albacore tuna fillets
  • 1/4 cup kosher salt
  • 1/4 cup brown sugar
  • Water as needed for brine

Optional Seasonings

  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon zest

Instructions

Preparation

  • Rinse the albacore tuna fillets under cold water and pat dry with paper towels. Prepare a brine by dissolving salt and sugar in water. Submerge the tuna in the brine and refrigerate for 2 hours.

  • Remove tuna from brine and pat dry. Optionally, season with black pepper, garlic powder, and lemon zest for added flavor.

Smoking

  • Remove the smoked tuna from the smoker and allow it to rest for a few minutes before slicing and serving.

Serving

  • Serve smoked albacore tuna with fresh salad or rice. Pair with a crisp white wine or sparkling water with lemon.

Storage

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in a vacuum-sealed bag.
