Ingredients
  

Salmon

  • 1 lb salmon fillets
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste

Mango Slaw

  • 2 ripe mangoes diced
  • 2 cups shredded cabbage
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • 1 tbsp honey

Taco Assembly

  • 8 corn tortillas
  • 1 avocado sliced
  • Lime wedges for serving

Instructions
 

Preparation

  • Preheat oven to 400°F. Place salmon on a lined baking sheet. Drizzle with olive oil and sprinkle with garlic powder, paprika, cumin, salt, and pepper. Roast for 12-15 minutes until cooked through.
  • In a large bowl, combine diced mango, shredded cabbage, chopped cilantro, lime juice, and honey. Mix well to combine.

Serving

  • Flake the roasted salmon into pieces. Warm tortillas in the oven or on a skillet. Place salmon, mango slaw, and avocado slices in each tortilla. Serve with lime wedges.
