  • 2 live lobsters about 1.5 pounds each
  • 1 pound elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese

Cheese Sauce

  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • Salt and pepper to taste
  • 1/4 tsp ground nutmeg

Topping

  • 1 cup breadcrumbs
  • 2 tbsp unsalted butter melted

Preparation

  • Boil the live lobsters in salted water for about 8 minutes per pound. Once cooked, remove the meat and chop into bite-sized pieces.
  • In the same pot, cook the macaroni according to package instructions until al dente. Drain and set aside.

Cheese Sauce

  • Melt butter in a saucepan over medium heat. Add flour and stir continuously to form a roux, about 2-3 minutes.
  • Gradually whisk in milk, ensuring the mixture stays smooth. Bring to a simmer and cook until thickened.
  • Remove from heat and stir in cheddar and Gruyère until melted. Season with salt, pepper, and nutmeg.

Assembly and Baking

  • Mix the cooked pasta, lobster, and cheese sauce together. Transfer to a greased 9x13 inch baking dish.
  • Combine breadcrumbs with melted butter, then sprinkle over the mac and cheese.
  • Bake in a preheated oven at 350°F for 30 minutes or until the top is golden and bubbly.

Serving

  • Allow the dish to cool slightly before serving. Enjoy with your choice of side dishes.
