Equipment

  • 1 skillet heavy-bottomed

Ingredients

Main Ingredients

  • 4 salmon fillets skin-on
  • 2 cups cherry tomatoes
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 2 tbsp fresh basil chopped
  • 1 tbsp fresh parsley chopped

Instructions

Preparation

  • Pat the salmon fillets dry with a paper towel and season generously with salt and pepper.
  • Heat a heavy-bottomed skillet over medium-high heat and add 1 tablespoon of olive oil.
  • Place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes on each side, or until the skin is crispy and the salmon is cooked through. Remove the salmon from the skillet and set aside.
  • In the same skillet, add another tablespoon of olive oil. Add the minced garlic and cook until fragrant, about 30 seconds. Add the cherry tomatoes and cook until they start to burst, about 5 minutes.
  • Return the salmon to the skillet and add the lemon juice, fresh basil, and parsley. Toss everything together to combine.

Serving

  • Transfer the salmon and tomatoes to serving plates. Garnish with additional fresh herbs if desired.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 2 days.
