Ingredients
  

Salmon and Glaze

  • 4 salmon fillets about 6 oz each
  • 1/4 cup honey
  • 2 tbsp hot sauce
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Vegetables

  • 1 lb baby potatoes halved
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini sliced
  • 1 red onion cut into wedges
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat oven to 400°F. Line a sheet pan with parchment paper. Place salmon fillets on the pan, skin side down, and season with salt and pepper.
  • In a small bowl, whisk together honey, hot sauce, soy sauce, olive oil, garlic powder, and onion powder. Pour half of the glaze over the salmon, reserving the rest.
  • In a large bowl, toss baby potatoes, red and yellow bell peppers, zucchini, and red onion with olive oil, salt, and pepper. Spread vegetables around salmon on the sheet pan.
  • Roast in the preheated oven for 20-25 minutes, or until salmon is cooked through and vegetables are tender. Brush salmon with remaining glaze halfway through cooking.

Serving

  • Transfer salmon and vegetables to serving plates. Drizzle with any remaining glaze from the pan. Serve immediately.

  • Allow leftovers to cool completely before transferring to an airtight container. Store in the refrigerator for up to 3 days.
