Equipment

  • 1 large skillet preferably cast-iron
  • 1 spatula
  • 1 measuring cups and spoons

Ingredients

Salmon

  • 4 salmon fillets skin on
  • 1 tbsp olive oil
  • Salt and pepper to taste

Creamy Sauce

  • 2 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cups fresh spinach leaves
  • Pinch of red pepper flakes

Instructions

Preparation

  • Season the salmon fillets with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat. Place the fillets skin-side down and sear for 4-5 minutes per side until golden brown. Remove from skillet and set aside.
  • In the same skillet, add garlic and sauté for 1 minute. Stir in sun-dried tomatoes and cook for another 2 minutes. Pour in heavy cream and bring to a simmer. Add parmesan cheese and stir until the sauce thickens.
  • Return the salmon fillets to the skillet, nestling them into the sauce. Add spinach leaves and allow them to wilt into the sauce as it simmers. Cook for an additional 5 minutes.

Serving

  • Place a salmon fillet onto each plate, spooning over some of the sauce and spinach. Serve immediately with your choice of side dish.

Storage

  • Allow the salmon to cool completely before transferring to an airtight container. Store in the refrigerator for up to 2 days.

Notes

Pro Tips: Ensure your skillet is hot before adding the salmon to achieve a perfect sear. Taste the sauce as you go and adjust the seasoning.
Ingredient Substitutions: Use half-and-half instead of heavy cream for a lighter sauce. Substitute kale or Swiss chard for spinach.
How to Serve: Pair with garlic mashed potatoes or a light salad for a balanced meal.
Storage & Freshness: Store leftovers in an airtight container in the fridge for up to 2 days.
Make-Ahead Tips: Prepare the sauce ahead of time and reheat gently before adding the salmon.
