Equipment

  • 1 large baking sheet lined with parchment paper
  • 1 small bowl
  • 1 basting brush

Ingredients

For the Salmon

  • 4 salmon fillets
  • 1/4 cup hot honey
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

For the Vegetables

  • 1 red bell pepper sliced
  • 1 zucchini sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

Preparation

  • Preheat your oven to 400°F. Line a large baking sheet with parchment paper.
  • Pat the salmon fillets dry with a paper towel. Place them on one side of the prepared baking sheet and season with salt and pepper.
  • In a small bowl, mix hot honey, minced garlic, and lemon juice. Brush the glaze over the salmon fillets generously.
  • Arrange the bell pepper, zucchini, and cherry tomatoes around the salmon. Drizzle with olive oil and season with salt and pepper.
  • Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
  • For an extra caramelized finish, broil for an additional 2 minutes, watching carefully to prevent burning.

Serving

  • Transfer the baked salmon and vegetables to a serving platter. Garnish with fresh lemon slices and herbs if desired.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or a skillet before serving.

Notes

Pro Tips: Ensure vegetables are cut into uniform pieces for even cooking. Use a meat thermometer to check the salmon's internal temperature, aiming for 145°F for perfectly cooked fish. Reduce the amount of hot honey for a milder dish.
Ingredient Substitutions: Create your own hot honey by mixing honey with chili flakes. Substitute salmon with cod or halibut if preferred. Swap vegetables based on what's in season.
How to Serve: Pair with jasmine rice or a fresh green salad for a complete meal.
Storage & Freshness: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
Make-Ahead Tips: Prepare the glaze and chop vegetables in advance to save time on busy weeknights.
