Equipment

  • 1 air fryer
  • 1 shallow dishes for breading
  • 1 meat thermometer optional

Ingredients

Main Ingredients

  • 4 cod fillets about 6 ounces each
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil spray

Optional Seasonings

  • 1 teaspoon paprika
  • 1 tablespoon lemon zest
  • 1 tablespoon chopped fresh parsley

Instructions

Preparation

  • Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
  • In one shallow dish, place the flour. In another, beat the eggs. In a third, mix panko breadcrumbs with garlic powder and onion powder.

Cooking

  • Dredge each fillet in flour, dip in the beaten eggs, and coat with the breadcrumb mixture. Ensure each fillet is well coated.
  • Preheat the air fryer to 400°F. Lightly spray the fillets with olive oil and place them in the air fryer basket, ensuring they do not overlap. Cook for 10-12 minutes, flipping halfway through.
  • Ensure the internal temperature of the fish reaches 145°F. The fillets should be golden brown and flake easily.

Serving

  • Transfer the cooked fillets to a serving platter. Optionally, garnish with fresh parsley and a wedge of lemon.

Storage

  • Allow any leftover fillets to cool completely. Store in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer for crispiness.
