Equipment

  • 1 grill preheated to medium-high heat
  • 1 Medium bowl
  • 1 aluminum foil heavy-duty

Ingredients

Main Ingredients

  • 4 fish fillets such as salmon, cod, or tilapia
  • 1 large zucchini sliced
  • 1 red bell pepper sliced
  • 1 cup cherry tomatoes

Marinade

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions

Preparation

  • Rinse the fish fillets and pat them dry. Slice the zucchini and bell pepper. Combine olive oil, lemon juice, garlic, salt, and pepper in a bowl.
  • Brush the fish fillets with the marinade. Let them sit for a few minutes while you prepare the vegetables.
  • Place each fish fillet on a piece of aluminum foil. Top with sliced zucchini, bell pepper, and cherry tomatoes. Drizzle remaining marinade over the top.
  • Fold the foil over the fish and vegetables, crimping the edges to seal tightly. Leave some space inside for steam.

Serving

  • Place foil packets on the preheated grill. Close the lid and grill for 12-15 minutes until the fish is cooked through and flakes easily.
  • Carefully open the packets to avoid hot steam. Serve hot with your choice of side dishes and sauces.

Storage

  • Allow leftover packets to cool completely. Transfer to airtight containers and store in the refrigerator for up to 3 days.
  • Reheat leftovers in the oven or on the grill until warm. Do not microwave as the foil may cause sparks.
