Ingredients
  

Batter Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 2 large eggs
  • 1/2 cup milk

Cod

  • 1 lb fresh cod fillets cut into 1-inch pieces
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For Frying

  • Vegetable oil for frying

Preparation

  • Cut the cod fillets into bite-sized pieces. Season with salt and pepper.
  • In a large mixing bowl, combine flour, cornstarch, baking powder, and salt. Set aside.
  • In another bowl, whisk together the eggs and milk until fully combined.
  • Dip each cod piece into the dry mixture, then the wet mixture, and back into the dry mixture for an even coating.
