Catfish Nuggets

  • 1 pound catfish fillets cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 large eggs
  • 1/2 cup buttermilk
  • Vegetable oil for frying

Preparation

  • Cut the catfish fillets into bite-sized pieces. Pat them dry with paper towels to remove excess moisture.
  • In a large bowl, combine flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, beat the eggs and mix with buttermilk.
  • Dip each piece of catfish into the egg mixture, then coat with the flour mixture. Ensure each piece is evenly covered.
  • Heat vegetable oil in a deep fryer or large skillet to 350°F. Use a thermometer to maintain the correct temperature.
  • Fry the catfish nuggets in batches, without overcrowding the pan, until golden brown and crispy, about 3-4 minutes per batch.
  • Remove the nuggets from the oil and drain on a wire rack to keep them crispy.
