Equipment

  • 1 Deep fryer or heavy skillet
  • 1 wire rack
  • 1 mixing bowls for coating mixtures

Ingredients

Coating

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper optional

Wet Mixture

  • 2 large eggs
  • 1 cup buttermilk

Fish

  • 1 lb bluegill fillets
  • Vegetable oil for frying

Instructions

Preparation

  • In a mixing bowl, combine flour, cornmeal, salt, pepper, paprika, garlic powder, and cayenne pepper. Set aside.
  • In another bowl, whisk together eggs and buttermilk until well combined.
  • Dip each bluegill fillet into the buttermilk mixture, allowing the excess to drip off. Then dredge in the flour mixture, ensuring each side is well coated.

Serving

  • Heat oil in a deep fryer or heavy skillet to 350°F. Fry the fillets in batches, about 3-4 minutes per side, until golden brown.
  • Remove the fillets and drain on a wire rack. Serve hot with your favorite sides.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in an oven to maintain crispiness.

Notes

Pro Tips: Ensure the oil remains at a steady 350°F for best results. Pat the fish dry before coating for a crispier finish.
Ingredient Substitutions: Panko breadcrumbs can replace cornmeal for extra crunch. Lemon zest adds a fresh twist to the coating.
How to Serve: Pair with coleslaw or a fresh green salad. A squeeze of lemon over the fried fish enhances the flavors.
Storage & Freshness: Consume within 2 days for best quality. Reheat in the oven to avoid sogginess.
Make-Ahead Tips: Prepare the coating and wet mixture in advance. Store separately until ready to use.
