Coating

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 2 tsp salt
  • 1 tsp black pepper

Egg Wash

  • 1/4 cup milk

Preparation

  • Rinse the catfish fillets under cold water and pat them dry with paper towels. Season them with salt and pepper on both sides.
  • In a shallow dish, combine cornmeal, flour, salt, and pepper. In another bowl, whisk together eggs and milk until well combined.
  • Dip each fillet into the egg mixture, ensuring it's fully coated, then dredge in the cornmeal mixture. Press gently to adhere the coating.

Frying

  • In a large skillet, heat vegetable oil to 350°F. Use enough oil to allow the fish to float while frying.
  • Carefully place the coated fillets into the hot oil, frying in batches. Cook each side for about 4-5 minutes or until golden brown and crispy.
  • Remove the fish from the skillet and drain on paper towels to remove excess oil.

Serving
