Equipment

  • 1 deep fryer
  • 1 mixing bowl large
  • 1 whisk

Ingredients

Batter

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups non-alcoholic beer

Fish

  • 4 cod fillets about 6 oz each
  • Salt and pepper to taste

Chips

  • 4 large russet potatoes
  • Salt to taste

Tartar Sauce

  • 1 cup mayonnaise
  • 2 tbsp chopped pickles
  • 1 tbsp capers
  • 1 tbsp lemon juice
  • Pepper to taste

Instructions

Preparation

  • In a large mixing bowl, combine the flour, baking powder, and salt. Gradually whisk in the non-alcoholic beer until smooth. Let the batter rest.
  • Season the cod fillets with salt and pepper. Pat them dry with paper towels to ensure the batter adheres properly.

Serving

  • Heat oil in a deep fryer to 350°F. Dip the cod into the batter and fry until golden brown, about 5-7 minutes per fillet. Drain on paper towels.
  • Cut potatoes into wedges. Soak in cold water for 30 minutes. Drain and pat dry. Fry in hot oil at 350°F for 3-4 minutes. Remove, increase oil temperature to 400°F, and fry again for 2-3 minutes until crispy.

Storage

  • Place any leftover fish and chips in an airtight container. Refrigerate and consume within 2 days. Reheat in an oven to maintain crispiness.
