Equipment

  • 1 baking sheet lined with parchment paper
  • 1 mixing bowl for slaw
  • 1 knife for chopping

Ingredients

Salmon and Marinade

  • 1 lb salmon fillet
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder

Mango Slaw

  • 1 mango diced
  • 2 cups shredded cabbage
  • 1/4 cup cilantro chopped
  • 1 tbsp lime juice

Taco Assembly

  • 6 soft tortillas
  • 1 avocado sliced
  • hot sauce to taste

Instructions

Preparation

  • Preheat your oven to 400°F. In a small bowl, mix together olive oil, lime juice, garlic, cumin, and chili powder. Brush this mixture over the salmon fillet and let it marinate for 15 minutes.
  • Place the marinated salmon on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
  • In a large mixing bowl, combine diced mango, shredded cabbage, chopped cilantro, and lime juice. Toss well to ensure everything is evenly coated.
  • Warm the tortillas in the oven or on a skillet. Flake the baked salmon into bite-sized pieces. Place a portion of salmon on each tortilla, top with the mango slaw, avocado slices, and a drizzle of hot sauce.

Serving

  • Serve the tacos immediately while the salmon is warm and enjoy the fresh, vibrant flavors.

Storage

  • Store any leftover salmon and slaw in separate airtight containers in the refrigerator for up to 2 days. Reheat the salmon gently before serving.
