Equipment

  • 1 air fryer
  • 1 mixing bowls for coating ingredients
  • 1 tongs for turning fish

Ingredients

Fish Preparation

  • 1 pound white fish fillets such as cod or tilapia
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Coconut Coating

  • 1 cup unsweetened shredded coconut
  • 1/2 cup panko breadcrumbs
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 2 large eggs beaten

Instructions

Preparation

  • Pat the fish fillets dry with paper towels. Season with salt and pepper on both sides.
  • In a shallow dish, mix together the shredded coconut, panko breadcrumbs, paprika, and garlic powder. In another dish, beat the eggs.
  • Dip each fish fillet into the beaten eggs, then press into the coconut mixture, ensuring an even coating on all sides.

Cooking

  • Preheat your air fryer to 400°F for about 3 minutes.
  • Place the coated fish fillets in the air fryer basket in a single layer. Cook for 10-12 minutes, turning once halfway through, until the fish is cooked through and the crust is golden brown.

Serving

  • Serve the coconut-crusted fish warm, garnished with fresh lime wedges and chopped cilantro if desired.

Storage

  • Keep any leftover fish in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer for a few minutes to regain crispiness.

Notes

Pro Tips: Ensure even coating by pressing the coconut mixture firmly onto the fish. Use a cooking spray if needed to enhance crispiness. Ingredient Substitutions: Substitute fish with chicken tenders for a different protein. Add chopped macadamia nuts for extra crunch. How to Serve: Pair with jasmine rice and mango salsa, or a citrus salad. Storage & Freshness: Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in air fryer. Make-Ahead Tips: Coat the fish and refrigerate up to 4 hours before air frying.
